Screaming Eagle: Jonata, The Hilt & The Pairing
Unified by the vision and passion of winemaker Matt Dees, these wines have gained cult classic status and exemplify the best of what Santa Barbara has to offer.
Jonata is one of a new breed of producers throughout the world who are thriving with a non-traditional amalgam of varieties and blends. Informed by cutting edge viticulture, meticulous winemaking, and a polyface approach to their estate, the Jonata wines are on the vanguard of an emerging quality movement in California winegrowing. To understand The Hilt, one might need to come visit the hard and harsh conditions under which these wines are born. The Santa Rita Hills Valley is a complex AVA, and it offers a range of altitudes, aspects, soil types, and microclimates, giving winemaker Matt Dees a diverse patchwork of vineyard parcels from which to select grapes and create wines with distinctive styles. The Paring was born out of a desire to explore, experiment and excite—without rules. Made from the vineyard blocks that are either too young or don’t fit into the vintage style of the highly acclaimed Jonata and The Hilt wines—The Paring is a cut of each estate. The Paring puts pedigree first, and then lets imagination take over.

STAGG
 – George T. Stagg built the most dominant American distillery of the 19th century, during a time known as the Gilded Age of Bourbon. Uncut and unfiltered, this robust bourbon whiskey ages for nearly a decade and boasts the bold character that is reminiscent of the man himself. Stagg, formally known as Stagg JR., offers rich, sweet, chocolate and brown sugar flavors that create a perfect balance with the bold rye spiciness. The boundless finish lingers with hints of cherries, cloves and smokiness. The Single Barrel #007, expertly selected by the Fire & Vine team, was distilled on November 25th, 2013.
ANGELS ENVY
 – Rooted in 200 years of bourbon heritage and inspired by legendary Master Distiller Lincoln Henderson’s lifetime spent crafting fine spirits, Angel’s Envy is a masterpiece. The 5% of spirit lost each year during barrel aging is called the “Angel’s Share,” what’s left behind after we’re done is truly worthy of envy. After tasting our finished whiskey, Lincoln joked that we’d finally gotten a better deal than the angels. And so Angel’s Envy was born. Every batch is finished in specially selected, ruby port wine casks for up to six months, imbuing the bourbon with notes of caramelized fruit, chocolate, and a deep, smoky undertone. This offering was individually selected by our team, barrel number 1952, and bottled at 110 proof. This bottling of Angel’s Envy Single Barrel is exclusive to Fire & Vine Hospitality restaurants, and the very first in Washington State.
